JCS Beef Tripe & Beans

Ok, so before you completely disregard this dish because of its main ingredient (tripe- cow intestine), you might want to put on your curious cap and join the rest of the people in the world who praise this dish as a delicacy. Besides, everything taste better when JCS products are added.

  • Wash tripe carefully and then cut into small pieces. Place tripe in pot and cover with water.
  • Bring to a boil, then lower heat and simmer until tripe is tender usually about 2 hours. (You can also put tripe in a pressure cooker for a quicker cook time).
  • Add the onions, escallion, thyme, JCS Curry Powder, scotch bonnet pepper and JCS Black Pepper.
  • Add water if necessary. Continue to simmer for about 6-8 minutes then add JCS Butter Beans and simmer for an additional 10 minutes.
  • Gravy should thicken. Serve with rice.
