Irie-Stylie Ital Stew

- 2 cans JCS Red Kidney Beans (15oz)
- 2 whole scotch bonnet peppers (if you like it hot cut the pepper up)
- 1 cup water
- 2 cups JCS Coconut Milk (14oz)
- 6 pimento grains JCS Whole Pimento
- Cloves garlic (1 crushed and 3 whole)
- 3 chopped scallions
- 1 small onion chopped
- Pinch of JCS Dry Thyme
- ½ teaspoon JCS Black Pepper
- 2 potatoes (Irish), cubed
- 1 sweet potato, cubed
- 3 carrots, sliced
- 10oz frozen okra
A country style spin on a well known Caribbean vegetarian dish. Also called "vege-stew," this dish is common among both meat and vegetable lovers.
-Add water to Red Kidney beans on stove top and bring to a boil. Reduce heat.
-Add coconut milk, scallion, pimento grain, whole garlic and whole pepper in the pot.
-Slowly boil and simmer for a few minutes.
-Season with onions, crushed garlic, black pepper and thyme.
-Add carrots, potatoes and okras
-Let simmer for 15-20 minutes
-Remove the scallions and hot pepper before serving.
-Serve hot with white rice.
